Apple Cheddar Cream Cheese Danish #BrunchWeek

Hasn’t Brunchweek been a blast?

I am so happy I got to participate this year!

Today’s recipe is a completely amazing apple Danish.  And since I made them small-ish, they’re probably technically bear claws.  But no matter what you call them, they are delicious!


This recipe starts off with the amazing Lady Alice Apples.  Lady Alice Apples are a natural hybrid gourmet apple and they’re completely amazing.  Anyhow, the apples are cooked with some sugar and butter to make them all caramely (delish, right?)



Then refrigerated crescent rolls come to the party (because brunch needs to be quick!)  Add an amazing cream cheese filing – cream cheese, sugar, sharp cheddar (what?!?), and the most amazing almond extract ever and we’ve got one amazing Danish!

The kids crinkled their noses and wouldn’t even give these a try – which was a total win for me and Hubs, because these things were amazing!

Apple Cheddar Cream Cheese Danish
Adapted from Lauren’s Latest

Apple Filling
½ tbsp butter
1 large apple, such as Rainier Fruit Lady Alice
½ tsp ground cinnamon
2 tbsp granulated sugar, such as Dixie Crystals
1/8 tsp almond extract, such as Nielsen Massey

Cream Cheese Filling
1 (8 oz) package cream cheese, softened
½ cup sharp cheddar, such as Cabot Vermont Sharp, shredded
½ cup granulated sugar, such as Dixie Crystals
3 tbsp all purpose flour
½ tsp almond extract, such as Nielsen Massey
1 tube refrigerated crescent rolls

Glaze
½ cup powdered sugar
1 tbsp milk
1-2 drops almond extract, such as Nielsen Massey


Preheat the oven to 375 degrees F and line a baking sheet with parchment of a silicone mat.

Heat the butter in a small saucepan over medium-low heat.  Stir in the apples, cinnamon, almond extract, and sugar.  Cook until the apples are tender and the sugar is caramelized, 10-15 minutes.

Meanwhile, place the cream cheese, cheddar, sugar, flour, and almond extract in a mixing bowl.  Stir until well combined.

Unroll the crescent rolls and divide them into 4 rectangles.  Press together the perforation, and roll flat with a small dowel or rolling pin.  Use a chef scissors to cut strips every half-inch or so (1 ½ inch deep) on each side of the crescent rolls.

Divide the cream cheese filling evenly between the 4 rolls and top with apple filling.

Fold the dough strips up over the filling, alternating sides.

Bake in the preheated oven for 20 minutes or until the filling is set and the crust is a deep golden brown.

Cool for 10 minutes.

Mix together the glaze ingredients.  Glaze the danishes while warm and serve.

  2. mmmmm Dad used to put cheddar with his apple pies. I never was into that, but I could be persuaded to make these. They look fabulous.
