Valentine Mint Cookies #FilltheCookieJar


It’s time to fill the cookie jar!  The Fill the Cookie Jar participants link up their favorite cookie recipes at the beginning of each month, because, let’s face it – that cookie jar should never be empty!

For this month’s cookie, I decided to take a spin on my favorite chocolate chip cookies and use up some minty M&Ms I had leftover from Christmas at the same time!

If you don’t have leftover Christmas candy, use mint chocolate chips instead (I’ve made them both ways and they’re amazing!)

These are so popular in my house, that the kids keep begging me to make more! 


Valentine Mint Cookies

1 cup unsalted butter, softened
¾ cup brown sugar
¼ cup white sugar
1 (3.4 oz) package vanilla instant pudding
2 eggs
1 tsp vanilla extract
1 tsp baking soda
½ tsp salt
2 ¼ cups all purpose flour
2/3 cup mini chocolate chips
2/3 cup Mint M&Ms or Mint Chocolate Chips
2/3 cup M&Ms


Preheat the oven to 350 degrees F and line baking sheets with parchment.

Place the butter and sugars in the bowl of a stand mixer and beat until smooth and creamy.  Add the pudding mix and mix until combined.

Add the eggs, one at a time, and mix each one thoroughly; stir in the vanilla.

Turn the mixer to low and slowly add the baking soda, salt, and flour. 

Use a large spoon to stir in the M&Ms, Mint M&Ms, and chocolate chips.

Use a 2 tablespoon scoop to drop the cookies onto the prepared sheets.

Bake the cookies for 10-12 minutes or until lightly browned.  Cool on wire racks and store in a tightly sealed container.

Makes about 36 cookies
