Rosemary Roasted Rainbow Carrots


Okay.

How gorgeous are these carrots?!?  I wish I could get them in my area all the time (but alas, I cannot), but I have to just enjoy them while I have them!

I decided the best way to use these would be a simple preparation to let the carrots speak for themselves!


A little oil, salt, pepper, & rosemary and these beauties were done!

Wouldn’t these be perfect on the Thanksgiving table?


Rosemary Roasted Rainbow Carrots
Recipe from Oh My Veggies

15 whole carrots, peeled & trimmed
1-2 tbsp olive oil
Salt & pepper
1 sprig fresh rosemary, minced


Preheat the oven to 400 degrees F and line a baking sheet with parchment or a silicone mat.

Place the carrots on the baking sheet.  Drizzle oil and season with salt, pepper, and rosemary.

Roast in the preheated oven for 20-30 minutes or until the carrots are crisp-tender, turning the carrots halfway through cooking.

Remove from the oven and serve.
