Pumpkin Spice Sugar Cookies are a new fall favorite!

Because who doesn’t love cookies?

I got a jump on my Thanksgiving cookies this year (while also making a few Halloween Cookies!)  I’m sharing the yummy cookie recipe here, but be sure to check out my other blog, Amy’s Confectionery Adventures for my Day of the Dead Cookies and my Thanksgiving cookies!

Because I’m obsessed with pumpkin everything this year, I decided to jazz up my sugar cookies with some pumpkin spice (no actual pumpkin in this one, just the spices!)


These cookies are absolute perfection – they’re soft, chewy, and hold up well to decorating (because duh, the original recipe comes from Georganne, the brains behind Lila Loa), and the dash of pumpkin spices make them perfect for fall.

I’m trying my hand at freezing decorated cookies for the first time (since Thanksgiving is still weeks away!) Wish me luck!

Pumpkin Spice Sugar Cookies

1 cup butter slightly softened
1 cup brown sugar
½ cup white sugar
2 eggs
2 tsp vanilla
¾ tsp salt
½ tsp ground cinnamon
¼ tsp ground ginger
1/8 tsp ground cloves
¼ tsp baking powder
4 ½ cups flour.


Preheat the oven to 350 degrees F and line baking sheets with silicone mats (if desired).

Cream together the butter and the sugars in a stand mixer fitted with a paddle attachment.  Add the eggs and vanilla and mix thoroughly.  Add the salt, baking powder, and spices, mix.  Slow add in the flour.

Dust a rolling mat liberally with flour.  Roll out the dough to ¼-inch thickness (mine are usually a bit thinner) and cut into desired shapes.  Bake in the preheated oven for 7-11 minutes or until set.


Cool before frosting.
