Chai Tea Latte Muffins #TastyParTEA

I love that tea magnet you guys!  It is such an amazing way to steep the tea - it takes out all the mess!  Perfection!

Once I started thinking about cooking with tea, I knew I wanted to make something sweet!  I was thinking about the warm cozy flavors in chai tea and how perfect they are in the late fall and it hit me: I wanted to bring those flavors into some delicious muffins!  Because I just love muffins!  They’re so perfect and delicious and portable – and these ones have chocolate and caffeine!  Woohoo!! Best muffins evah!



Chai Tea Latte Muffins
Adapted from Taste of Home

½ cup hot water
2 bags chai tea
2 tbsp instant coffee
2 cups all purpose flour
½ cup sugar
2 ½ tsp baking powder
½ tsp salt
8 oz sour cream
½ cup butter, melted
1 egg
1 tsp vanilla extract
¾ cup mini semi sweet chocolate chips


Preheat the oven to 375 degrees F and line 2 muffin tins with paper liners.

Place the tea bags into the hot water and steep for 5-10 minutes.  Stir in the instant coffee until dissolved.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Stir in the chai mixture, sour cream, butter, egg, and vanilla.  Mix until smooth.  Stir in the chocolate chips.

Use a large (approximately 3 tablespoon) scoop for divide the batter between the prepared muffin tins.

Bake for 17-20 minutes or until a toothpick inserted into the center comes out clean.  Cool for 5 minutes, then move to wire racks to cool completely.

Makes about 18 muffins
