Slow Cooker Smoky Apple Pulled Pork #AppleWeek

 

It’s the last day of #AppleWeek and today anything goes, so I’m sharing a yummy crockpot recipe!


A few weeks ago, my in-laws came up for a visit.

I wanted to cook dinner most nights they were here, but their second day also coincided with the kids’ school open house (which I was working with my new job) and my last night teaching Zumba (bittersweet – I miss it already!) 


So I needed an easy meal that could be served while I was at (both) my jobs! 

Yep, it was time to break out the crockpot.  I love using pop (or soda, if you’re one of those people) in roasts – the acid and sugars make the most tender roasts!

I had a Mexican Sprite in the fridge and (more) of those tart little apples the kids picked from my parents’ tree, so I tossed those in with a few more odds and ends and came up with an amazing pulled pork recipe!

It’s amazing on it’s own and even better served up on homemade bread with your favorite BBQ sauce!

Recipe Notes:
-I used small tart apples from my parents’ backyard tree.  Granny smith apples would also work well.


Smoky Apple Pulled Pork

2 lb pork roast
Salt & pepper
1 onion, diced
1 tart apple, cored and roughly chopped (see note)
2 cloves garlic, smashed
1 (12 oz) bottle sprite or 7-up
1 tbsp liquid smoke
1 tbsp Worcestershire sauce


Place the onions, apples, and garlic in the bottom of a 4 quart slow cooker.

Season the pork liberally with salt & pepper and place over the onions.  Pour in the sprite, liquid smokes, and Worcestershire sauce.  Cook on low for 10 hours or high for 5.

Remove the pork and shred with 2 forks.  Strain the solids out of the cooking liquid.  Return the cooking liquid and pork to the crockpot to keep warm.  Serve on fresh bread with BBQ sauce, if desired.

  1. What a fun recipes! I have seen pulled pork recipes using soda (yep, I'm one of them!), but haven't given it a try yet. I'll definitely have to give this a go!

  3. I agree that using pop in crock pot meals is great for breaking down the meat so it's nice, juicy and tender. I'm looking forward to trying your recipe!
