It’s Dr. Seuss’s Birthday today!
And what better way than to celebrate with green eggs (and
ham)?
Okay, first a little funny from The Argyle Sweater. Because…bwahahahaha.
Anyhow, I love Dr. Seuss books. They are so fun to read out loud to
kids! We have quite a few in our home
library (yes library, the children’s book collection is extensive).
Plus Green Eggs & Ham is kind of a foodie book, because…um
green eggs & ham. It’s one of my
favorites!
I made these goodies for a Dr. Seuss themed Kindergarten
Roundup (because my baby is going to Kindergarten in the fall you guys----wahhhhhh!!!!!)
At the school, these were served over Sun Chips to represent
the ham (but I didn’t get a picture of that).
Anyway, these are fun and easy to make. You can make as few or many as you’d like (I
made an entire package of regular Single Stuff Oreos and a package of Mint
Oreos). Lucky for me, I had some
Christmas Mint M&Ms squirreled away, so I had an abundance of green
M&Ms!

Green Eggs (and
Ham)
Almond Bark, melted
Mint Oreos
Green M&Ms
Dip the Oreos in the melted almond bark, allowing excess bark
to drip off. Place on a waxed paper
lined tray. Immediately press a green
M&M into the center of the wet cookie.
Cool until the bark is hardened.
Serve over Sun Chips, if desired.
Love! When my girls were growing up we made green eggs and ham...I never could get over green eggs! Your cookies look much, much better!
