Crockpot Pork Roast with Apples & Onions




I love those simple and easy crock pot meals!  This recipe marries a succulent pork roast with the sweetness of apples plus onions two ways (caramelized and not)

I mean, slow cooked pork roasts are always amazing, but this one is a cut above the rest!



Crock Pot Pork Roast with Apples & Onions

2 tbsp butter, divided
2 medium onions, divided
1 (3 lb) pork roast
Salt & pepper
2 apples, cored & cut in wedges
3 cups apple juice
1 beef bouillon cube
1 bay leaf
1 sprig fresh rosemary


In a large skillet, melt 1 tablespoon of butter.  Thinly slice one onion and add it to the skillet.  Cook over medium heat until caramelized, reaching a deep amber in color.  Remove from the skillet and set aside.

Season the pork liberally with salt and pepper.  Melt the remaining tablespoon of butter in the same skillet.  Turn the heat to medium-high.  Add the pork and sear on all sides.

Cut the remaining onion into wedges and add it to the crockpot, along with the apple wedges and then the seared pork.  Place the caramelized onions on top. 

Add the apple juice, bouillon cube, bay leaf and rosemary. 

Cover the slow cooker and cook on LOW for 6-8 hours (or HIGH for 3-4 hours) or until the roast reaches an internal temperature of 145 degrees F.

Serve the pork roast sliced, along with the apples and onions.
