We had some friends over for game night last weekend. I usually make some sort of queso for game night. This time, however, I wanted to take things a slightly different direction with beer cheese dip.
There are tons of ways to make beer cheese dip, but I went with the simplest, most beer filled dip I could find.
This one is simple – just beer and two types of cheese: cream cheese for smoothness and extra sharp cheddar for a nice bite to balance out the beer.
After all, what’s the point I you can’t even tell if there’s beer in the beer cheese dip?
In fact, this dip is so perfect, that one of our guests said, “This is a very beery beer cheese dip! Awesome!”
It’s a home run. Serve this with a double batch of homemade soft pretzels and you have a great game night app!
-For smoother dip, buy a chunk of cheese and shred it yourself. Pre-shredded cheeses may contain anti-clumping agents that can make dip slightly gritty.
Beer Cheese Dip
Adapted from A Spicy Perspective
1 (12 oz) bottle light or amber beer (I used Fat Tire)
8 oz cream cheese, cut in cubes
16 oz extra sharp cheddar cheese, shredded
Heat the beer in a medium saucepan over medium heat.
Whisk in the cheeses until the dip is smooth. Or get distracted and let your cream cheese get lumpy, like I did. Either way, enjoy this boozy dip with fresh pretzels!
