Grilled Corn with Garlic Butter & Lime



Dude is back in the kitchen today with a fabulous grilled corn recipe!

When he was disappointed when I already had a meal plan the other day, so I told him he could choose a side dish.  He immediately started googling recipes and was ecstatic when he saw that this recipe came from the Food Network!

We made a few slight adjustments to suit Dude’s taste’s (plus Hubs did the actual grilling) and the results were delicious!

Corn is my favorite vegetable in summer! I chose to make this because I thought it would taste fabulous & it did!   


Grilled Corn with Garlic Butter & Lime

Corn
6 ears corn
1 lime, quartered
2 tbsp grated parmesan cheese
Fresh chives, chopped
Garlic butter (follows)

Garlic Butter
¼ cup softened butter (½ stick)
2 cloves garlic, minced
Dash sriracha, to taste
1-2 tbsp fresh chives, chopped
Salt & pepper


Peel back (but don’t remove) the corn husk.  Remove and discard the silk, then place the husk back around the corn.  Place the corn into a sink full of cold water and soak for 5-10 minutes.  Lightly shake off the excess water.

Place the corn (husks on) directly on the grill grates.  Grill for 8 minutes, then turn the corn and grill for another 8-10 minutes or until the corn is done.

While the corn cooks, stir together all of the garlic butter ingredients and set aside.

Peel back the husks and remove.  Brush the corn with garlic butter.  Follow with a generous squeeze of lime and a sprinkling of parmesan and chives.  Serve hot.
