Fruity Patriotic Popsicles

I love summer!

It’s the perfect time for relaxing with a yummy cool treat!

My boys love popsicles, so we decided to give our own version a try.

These are fantastic!  They’re refreshing and cool with a ton of natural fruit flavor – so much better the syrupy store version!  They’re an awesome popsicle with a punch of fruit – in fact – they count as a fruit serving!  Popsicles for the win!

Fruity Patriotic Popsicles

2/3 cup strawberries + 4 strawberry slices
2/3 cup blueberries
½ cup vanilla yogurt
2 tsp sugar, divided
1 tbsp water, divided

If using frozen berries, thaw in separate bowls, reserving any juice.

Place 1 strawberry slice into each of 4 small (3 oz) paper cups.  Press a popsicle stick into the strawberry to hold it straight.

Place the strawberries (plus any juice from thawing), 1 teaspoon of sugar (or to taste), and ½ tablespoon of water into a small food processor or blender.  Process until smooth.  Pour the berry puree evenly between the 4 cups.  Place in the freeze for 1 hour or until firm.

Spoon the yogurt over the frozen strawberry layer.  Freeze for 1 hour or until firm.

Place the blueberries (plus any juice from thawing), 1 teaspoon of sugar (or to taste), and ½ tablespoon of water into a small food processor or blender.  Process until smooth.  Pour the berry puree evenly between the 4 cups.  Place in the freeze for 1 hour or until firm.

Then, carefully peel back the paper cup and enjoy on a hot day!
