I love a great pasta salad in the summer!
This recipe comes from my mom, but I’ve tweaked it here and there to find my favorite combination of flavors!
¼ cup light sour cream
¼ cup Miracle Whip
¼ cup Ranch Dressing
½ tsp black pepper
½ tsp salt
¼ tsp garlic powder
¼ tsp paprika
½ lb bow tie pasta, cooked and cooled
2 chicken breasts, cooked & diced
½ cup broccoli florets, cut small
½ red bell pepper, diced
1 carrot, diced
½ cucumber, diced
2 tbsp onion, minced
¼ cup bacon bits
¼ cup roasted sunflower seeds
Stir together the sauce ingredients in a small bowl.
In a large bowl, stir together the salad ingredients and stir to coat. Cover and refrigerate for at least 2 hours. Taste the salad. Add more salt or sauce as desired.
Yields 6 main dish or 10 side dish servings
