Sometimes the best recipe ideas come from unexpected places.
In this case, the idea came from my friend Dan who admittedly does not even own a pot in which to boil pasta.
And yet it was Dan who was looking through my old blog recipes and came upon Birthday Cake Truffles and asked if I could help him make some but with Cherry Chip Cake instead of Funfetti.

Cherry Chip Cake mix is perfect for nice, summery truffles! These will definitely be the hit of the next BBQ!
*Because of the baking soda in the cake mix, the truffles may expand and crack the candy coating.
*Do not use a hand mixer for this recipe, you’ll burn out the motor!
Cherry Chip Truffles
An Amy’s Cooking Adventures Original Recipe
1 box cherry chip cake mix
1 (14 oz) sweetened condensed milk
8 oz vanilla flavored candy melts
Using a stand mixer (on low) or a wooden spoon, mix together the cake mix and the sweetened condensed milk, the mixture will be very thick.
Line several baking sheets with waxed paper.
Scoop about one tablespoon of the cherry chip mixture, roll it into a ball, and place it on the prepared baking sheets. Repeat until all of the mixture is rolled into truffles. Place the baking sheets and truffles into the refrigerator for 30 minutes to cool the truffles.
Use the microwave or a double boiler to melt the candy melts. Remove the truffles from the refrigerator and dip them, one at a time, in the melted candy, allowing the excess candy to drip off before replacing on the waxed paper.
Place the dipped truffles back into the refrigerator until the candy is hardened. Place the truffles in an airtight container until ready to serve.
