Quick! What’s everyone’s favorite fall latte??
Did you say pumpkin spice? Oh, I just love them!
Then something amazing happened. I found out that Pumpkin Spice Kisses existed. Apparently they’ve existed for a year or two and I just didn’t know it. But I do now. Oh, yes, I do now.
So, obviously these kisses needed to be made into some sort of cookie. And being a pumpkin spice kiss, it was clearly screaming to be made into a latte cookie.

Pumpkin Spice Latte Cookies
An Amy’s Cooking Adventures Original Recipe
½ cup unsalted butter, softened
½ cup brown sugar, packed
¼ cup honey
¼ cup pumpkin puree
1 tsp vanilla extract
1 ½ tbsp espresso powder
½ tsp cinnamon
¼ tsp ginger
1/8 tsp cloves
½ tsp salt
1 tsp baking soda
3 cups all purpose flour
½ cup granulated sugar
38 pumpkin spice kisses, unwrapped
Preheat the oven to 375 degrees F and line several baking sheets with parchment paper.
In stand mixer, cream together the butter and brown sugar on medium speed. Scrape down the sides of the bowl and add the egg, beat until combined.
Add in the honey, pumpkin, vanilla, espresso powder and spices. Mix on low until combined. On low speed, mix in the salt, baking powder and flour until well combined. Batter will be quite thick.
Scoop heaping tablespoons full of batter and roll them into 1-inch balls. Place the granulated sugar on a plate or shallow bowl. Roll each dough ball through the sugar until coated and place on the prepared baking sheets.
Bake the cookies in the preheated oven for 8-10 minutes or until the bottoms are browned and the tops begin to crack. Immediately after removing from the oven, press a pumpkin spice kiss into the center of each cookie and cool completely.
Store in an airtight container for a week or so.
Makes about 38 cookies
