Waffle Iron Eggs ‘n Biscuits



Brinner (Breakfast for dinner) is quickly becoming a family favorite in my house.  As a mom, I love transforming the ingredients of an ordinary breakfast sandwich into something fun, exciting and kid-friendly and serving it up for dinner!  

And since I often teach Zumba classes in the evening, I love a quick protein packed dinner to fuel my work outs.  Served up alongside a bowl of fresh fruit, this satisfying sandwich is sure to please! 


Waffle Iron Eggs ‘n Biscuits
An Amy’s Cooking Adventures Original Recipe

1 ¼ cup all-purpose baking mix (such as Bisquick)
1/3 cup low fat milk
3 tbsp cooked, crumbled bacon (or precooked bacon such as Oscar Mayer)
6 slices Swiss Deli Cheese
3 large eggs
Salt & pepper
Diced avocado (optional)



Preheat a small Belgian Waffle Maker (this is similar to the one I use) or waffle maker of your choice.

In a bowl, mix together the baking mix and milk until a soft dough forms.  Lightly dust a work surface with additional baking mix.  Place the dough onto the work surface and knead once or twice.  Use a rolling pin to roll out the dough to ¼ inch thickness. 

Use a pizza wheel to cut the rolled out dough into squares that are slightly smaller than the sections of the waffle maker (adjust accordingly if using a circular waffle iron). 

Spray the waffle iron generously with non-stick cooking spray and place the dough squares on the waffle iron.  Immediately add a sprinkling of bacon pieces (about 1 tablespoon) and a slice of cheese onto each dough square. 

Crack one egg over each pair of sandwich stacks and carefully (so as not to squeeze out all of the egg) close the lid.  Cook for 3-4 minutes or until the egg is cooked and the biscuit is golden brown.  Repeat with the remaining ingredients.

Serve hot sprinkled with diced avocado and additional bacon pieces (or tomatoes, or salsa, or any of your favorites).  Enjoy!

  2. Brinner! I love it!! My kids never eat breakfast for breakfast. Always for dinner. My sister is the same way with her kids. She just told me that she finally made pancakes for breakfast the other day and her kids said, "Mom, why are we eating dinner for breakfast?"
