Caprese Pasta Salad

 

Pasta salads are one of my favorite things to serve as a side whenever I’m grilling or on a picnic.  Pasta salads are so versatile and portable, I just love it!


This particular salad takes some of my very favorite summer flavors mixed together into a hearty salad.  Happy summer!




Caprese Pasta Salad


8 ounces cooked pasta

6 tablespoons olive oil

3 tablespoons balsamic vinegar

1 teaspoon garlic powder

½ teaspoon dried basil

Salt & pepper, to taste

1 cup cooked diced chicken

4 ounces mozzarella balls

4 ounces cherry tomatoes, cut in half

¼ cup fresh basil, cut chiffonade


Cook the pasta to al dente according to box instructions.  Run under cold water to cool.


Whisk together the olive oil, balsamic, garlic powder, dried basil, salt, and pepper.


Pour the marinade over the pasta and stir in the chicken, mozzarella, and cherry tomatoes.  Cover and refrigerate for at least 4 hours or overnight.


Serve topped with fresh basil.
