I love asparagus.
My kids hate asparagus.
Actually, that’s not entirely accurate. Dude tolerates asparagus. It is still the bane of Spud’s existence.
This does not stop me from buying asparagus and serving it for dinner, but I do occasionally try a different preparation in case Spud will finally come around.
He never really does, but I think even he will admit that this recipe was pretty good (he likes when cheese gets all crispy) and the rest of us enjoyed it as well!
Will this make him love asparagus, alas, no. Luckily he’s a good sport and tried it anyway.
Parmesan Crusted Asparagus
1 bunch asparagus, about 1 pound
1 tablespoon olive oil
½ teaspoon garlic powder
Salt & pepper
¼ cup grated parmesan cheese
Preheat oven to 400 degrees and line a baking sheet with parchment or a silicone mat.
Cut the woody ends off the asparagus and discard.
Toss the asparagus spears with olive oil. Then add garlic powder, salt, and pepper, and toss to coat.
Spread the asparagus on the prepared baking sheet. Sprinkle parmesan over the asparagus.
Bake in the preheated oven for 10 minutes or until asparagus is tender and cheese is browned.
