This weekend is Groundhog Day.
Maybe you have preschoolers and this is right up your alley.
Maybe you have serious doubts about the ability of rodents to predict the weather.
Maybe you actually have teenagers but you don’t care because you still haven’t fully left your making cute pancakes era.
That last one is me. I have teens, but I just can’t resist the cutesy foods sometimes!
Oh and also the groundhog is a total lie in the North where winter never ends in February (ever) lasts until May some years…ugh.
Groundhog Pancakes
1 batch fluffy buttermilk pancakes
Chocolate chips
Candy melts
Mini marshmallows
Mix the pancakes to recipe instructions. Heat a non-stick skillet to medium heat and add butter to grease. For the groundhog faces, make pancakes with about 4 tablespoons of batter each. For the cheeks and ears, make pancakes with about 1 tablespoon of batter each. Cook, flipping when bubbles stop appearing on the tops of each pancake.
To assemble, take 1 large and 4 pancakes to create a groundhog face with ears and cheeks. Use the chocolate chips for eyes, the candy melt for a nose, and mini marshmallows for teeth.
Serve to teenagers. Endure low key eyerolls, quiet resignation, or compliments from that empathetic kid who doesn't have the heart to tell you he’s not into this anymore.
