Mini Confetti Cookies


What’s more fun than regular chocolate chip cookies?


Tiny chocolate chip cookies…with sprinkles!



Because mini is always more fun.  These cookies are a bit larger than an American quarter and oh so cute and tasty!  My kids loved being allowed to have a handful of cookies instead of just one!




Mini Confetti Cookies


1 cup unsalted butter, softened

¾ cup brown sugar

¼ cup white sugar

1 (3.4 oz) package vanilla instant pudding

2 eggs

1 tsp vanilla extract

1 tsp baking soda

½ tsp salt

2 ¼ cups all purpose flour

1 ⅓ cup mini chocolate chips

⅓ cup sprinkles


Preheat the oven to 350 degrees F and line baking sheets with parchment.


Place the butter and sugars in the bowl of a stand mixer and beat until smooth and creamy.  Add the pudding mix and mix until combined.


Add the eggs, mixing thoroughly; stir in the vanilla.


Turn the mixer to low and slowly add the baking soda, salt, and flour. 


On low, stir in the M&Ms and sprinkles.


Scoop rounded teaspoons of dough onto the prepared sheets, rolling slightly to ensure uniform cookies.


Bake the cookies for 8-10 minutes or until lightly browned.  Cool on wire racks and store in a tightly sealed container.
