Dairy-Free Oreo Cake (Mickey & Minnie Smash Cakes)

This sweet little smash cake/cupcake combo was for a 1st birthday bash for boy/girl twins!

The Minnie cakes were Strawberry Sour Cream cake with Cream Cheese frosting (delish!).  The Mickey cakes were dairy-free Oreo Cake with Dairy Free Chocolate Frosting.  And it’s not actually black!  I used special dark cocoa powder for the frosting, which is such a dark brown, it can pass for black – perfect for a baby’s first cake!





Recipe Note:
*Always double check the ingredient list on boxed mixes for hidden dairy.
*I crush my Oreos in a small food processor, because I like smaller pieces.  You may also crush them with a rolling pin, if preferred.

Dairy-Free Oreo Cake

1 box white cake mix
1 box vanilla instant pudding (4 serving size)
1 cup water
¾ cup canola oil
4 egg whites
10 Oreos, crushed


Preheat the oven to 350 degrees F.  Line muffin tins with paper liners or line two 8-inch pans with parchment circles and spray with non stick spray.

Place the cake mix, pudding, water, oil, and eggs in the bowl of a stand mixer.  Beat on medium until smooth, scraping down the sides of the bowl as needed.  Stir in the crushed Oreos.

Divide the batter evenly between 24 cupcake liners or the two prepared pans.

Bake in the preheated oven for 22-25 minutes for cupcakes or 25-30 minutes for cakes or until a toothpick inserted into the center comes out clean.  Cool cakes in pans for 10 minutes, then remove from pans and cool completely on wire racks before frosting.
