Monstrous Monster Cookies


Monster cookies are great any time of the year, but they’re especially fun at Halloween, and especially if candy eyeballs come into play!



A word of caution however, overbake these and the candy eyes will melt!  Lesson learned here! Haha!


These were such a fun and festive way to greet my kids after school the other day!



Monstrous Monster Cookies 

Recipe from my sister-in-law, Aprille


3 eggs

1 cup brown sugar

1 cup white sugar

½ cup butter, softened

1 ½ cup peanut butter

1 teaspoon light corn syrup

¼ teaspoon almond extract

2 teaspoons baking soda

4 ½ cups old fashioned oats

1 (12 ounce) bag mini chocolate chips

1 (10 ounce) bag M&Ms

Candy eyes, optional



Preheat the oven to 3350 degrees F and line several baking sheets with parchment or silicone mats.


Beat together the eggs and sugars until smooth and combined.


Add the butter, peanut butter, almond extract, & corn syrup and beat until well combined.


Turn the mixer to low speed and mix in the baking soda and oats.  Finally, stir in the mini chocolate chips.


Scoop the dough by 2 tablespoon scoops onto the prepared baking sheets.  Flatten the dough balls slightly and press M&Ms and candy eyes onto the tops of the cookies.


Bake in the preheated oven for 10-12 minutes or until the cookies are beginning to brown on the edges.


Allow the cookies to cool on the cookies sheets for a couple minutes before transferring to wire racks and cooling completely.
