Remember the Shoup Noodle recipe I shared last time? Shoups are a Good Friday tradition at my parents’ house. But Shoups aren’t complete without a side of Cukes and Cream.
While Shoups are delicious on their own, they’re even better when dipped in the creamy sauce from Cucumber and Cream.
The recipe is super simple, but it really takes the cucumbers up a notch (not to mention the Shoups).
This recipe is bright and fresh and perfect for spring - it’s like a taste of summer (I think that’s why it’s so perfect for Easter weekend!)
Cucumbers and Cream
2 large cucumbers, peeled and sliced
1 tablespoon diced onion
½ cup cream
½ tablespoon vinegar
Salt & pepper
Mix all ingredients in a bowl. Serve.
