Mocha Cookies #Choctoberfest


Happy #Chocotberfest 2016!

This is one of my favorite blog events, because it’s all about my absolute fave: chocolate!



Yesterday I shared the giveaway info and a little big teaser with all kinds of chocolaty recipes that have appeared on this blog.  And this week, I’m adding even more!


I’m kicking things off with some amazing Mocha Cookies.

These are teeny tiny little bite sized cookies, but they are so rich and chocolaty that they really pack a punch!  They’re so amazing with a glass of milk or a cup of coffee! 


Mocha Cookies
Adapted slightly from Taste of Home

¼ cup butter, cubed
¼ cup semi-sweet chocolate chips
1 ½ tsp instant coffee
1/3 cup sugar
1/3 cup brown sugar
1 egg
1 tsp vanilla
1 cup all-purpose flour
3 tbsp dark cocoa powder
¼ tsp baking powder
1/8 tsp salt
1/3 cup toffee bits (or 1 Heath or Skor bar, crushed)


Preheat the oven to 350 degrees F and line 2 baking sheets with silicone mats of parchment.

In the microwave (or a double boiler), melt together the butter and chocolate, stirring until smooth.  Stir in the instant coffee.

Pour the chocolate mixture into the bowl of a stand mixer.  Add the sugar and mix until smooth.  Add the egg and vanilla.  Blend until smooth.

Add the flour, cocoa, baking powder and salt.  Mix well.  Stir in the toffee bits.

Use a small (approximately 1 tablespoon) cookie scoop to drop dough onto the prepared pans.  Bake for 8-10 minutes or until set.

Cool on pans for 5 minutes, then move to wire racks to cool completely before storing

Makes 30 bite sized cookies.
