Lucky Charm Crunch


Ok.  I loooove sweet chex mix.  But I almost never make it because I end up eating too much of it!

Luckily (for me), Spud has a summer birthday.  Which means he gets to take birthday treats to school for his half birthday.  Which falls in February!

Last year he brought cookies and this year I said the magic words (“Lucky Charms!”) and he brought this yummy chex mix (leaving a whole ton of leftovers at home for mom!)



If fact, there were so many leftovers, Dude took some to his Cub Scout meeting!

It’s super yummy, because there’s chocolate and white chocolate and it’s got that whole salty-sweet thing going on.  Plus it’s perfect for St. Patrick’s Day (or any time if you have kids!)


Lucky Charms Chex Mix

8 cups Lucky Charms cereal
4 cups pretzels
3 cups rice Chex
24 oz white chocolate/candy melts/almond bark, melted
1 ½ cups M&Ms
2 tbsp nonpareils or sprinkles
                                                                                  

Line 2 rimmed baking sheets with parchment or silicone mats (optional).

Put the kids to work, picking out all of the marshmallows out of the Lucky Charms.  Place them in a separate bowl.

Place the Lucky Charms (without marshmallows), pretzels, and Chex in a large bowl and stir to mix.

Melt the white chocolate (I use the microwave, but a double boiler will work as well).  Slowly pour the melted chocolate over the cereal mixture, stirring to ensure that the cereal & pretzels are evenly coated.  Pour in the marshmallows and M&Ms and stir until combined.

While the chocolate is still wet, pour the mix onto the prepared trays.  Immediately sprinkle with nonpareils.

Once the chocolate is dry, move the Lucky Charm Crunch to an air tight container to store.
