Mesquite Marinade for Pork or Chicken



Yay!  It’s grilling season!  This recipe has been my go-to for the last couple summers.



I love marinating a ton of chicken or pork at once and then chopping up the leftovers for salads for the rest of the week.  It’s my vibe all summer long!




Mesquite Marinade for Pork or Chicken

Adapted from Palatable Pastime


2 ½ - 3 pounds boneless pork or chicken

¼ cup lime juice

3 tablespoons brown sugar

2 tablespoons mesquite liquid smoke

2 tablespoons soy sauce

2 tablespoons olive oil

2 teaspoons onion powder

2 teaspoons garlic powder

2 teaspoons smoked paprika

1 teaspoon salt


Place the pork or chicken in a resealable bag.  Whisk together all other ingredients.  Pour over the meat and close the bag. Turn the bag a few times to make sure the meat is evenly coated.  Refrigerate overnight to marinade (alternately, freeze for up to 3 months, move to refrigerator over night to thaw prior to cooking).


The next day, preheat the grill to medium and.  Grill meat to a safe internal temperature and serve.
