Queso is one of those recipes I try over and over again. I’ve tried so many variations and they’ve all been delicious, but as time goes on, I’ve found that one of the simplest recipes is the best and I make it whenever Spud requests queso.
It's equally delicious with chips or fresh veggies!
Note that this is a spicier queso, but that’s how we roll around here.

If you can’t find Hot Diced Tomatoes and Green Chilis, add an additional 4 ounce can of hot diced green chilis
Go-to Queso Dip
3 tablespoons butter
3 tablespoons flour
1-1 ¼ cup lowfat milk
12 ounces sharp cheddar cheese, shredded
1 (10 ounce) can Hot diced tomatoes and green chilis
Melt the butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in 1 cup of milk, allowing it to thicken between additions.
Stir in cheese, whisking until melted. Stir in diced tomatoes and green chilis and heat through. Add additional milk if the queso is too thick.
Serve hot

ReplyDeleteI'm all for spicier too and I love that this doesn't include Velveeta. I always keep Rotel on hand so this is right up my alley.
