When Spud was little, he mispronounced it as “ick-sparagus” and since he still hates it, he hasn’t fixed the mispronunciation! Meatless meals always make my meat & potatoes boys act like they’re dying, so I thought, why not make asparagus soup and really make everyone miserable?</span></p><br><p dir="ltr" style="line-height: 1.38; margin-bottom: 0pt; margin-top: 0pt;"><span style="font-family: Georgia, serif; font-size: 14pt; font-variant-alternates: normal; font-variant-east-asian: normal; font-variant-numeric: normal; vertical-align: baseline; white-space-collapse: preserve;">I did </span><span style="font-family: Georgia, serif; font-size: 14pt; font-style: italic; font-variant-alternates: normal; font-variant-east-asian: normal; font-variant-numeric: normal; vertical-align: baseline; white-space-collapse: preserve;">not </span><span style="font-family: Georgia, serif; font-size: 14pt; font-variant-alternates: normal; font-variant-east-asian: normal; font-variant-numeric: normal; vertical-align: baseline; white-space-collapse: preserve;">divulge the ingredient list before I served this one. The boys saw the vibrant green and automatically assumed spinach (which is true). They groaned a bit, because they don’t love spinach in soup, but they will tolerate it.</span></p><br><p dir="ltr" style="line-height: 1.38; margin-bottom: 0pt; margin-top: 0pt;"><span style="font-family: Georgia, serif; font-size: 14pt; font-variant-alternates: normal; font-variant-east-asian: normal; font-variant-numeric: normal; vertical-align: baseline; white-space-collapse: preserve;">And they both ate the soup! This one is spicy, thanks to the chili pepper (I used a jalapeno from my garden). Then it’s topped with a fried egg and more garlic chili sauce! I had fun researching Spain and seeing many recipe titles that I’ve seen in other countries that have a Spanish influence. The book focuses more on recipes, with full color photographs are included every 3-4 pages, which, unfortunately are not labeled so the reader is left trying to guess which recipe is being shown (usually it's obvious, but not always).<br><br>I loved that the cookbook included the recipes from many Mediterranean countries with the title written in that country's language (translated to English in the subtitle).
