Narnian Pork

The thing about this recipe is that we were reading The Chronicles of Narnia #2 Prince Caspian when we heard about how they cooked their bear for dinner. They cooked it by wrapping pieces of the bear meat around apples, and cooking them on sticks over a campfire.


We did it in the oven, (and with pork), but mostly the same way.  It’s more one of those recipes when you read a book and get inspired to make dinner on a day (in Lent) when you have no dinner plan (that’s not a Friday). (But you don’t have to do it in Lent like we did).


Have you ever had one of those days when you have no dinner plan? If your answer is yes, then you know how we came up with “Narnian Pork” the new recipe that will blow your mind! (But before you make this recipe, we recommend that you read Prince Caspian so you know where this idea came from.)

The part we liked about it was how the pork soaked in some of the apple juice into it. It added a little taste to the pork.


Narnian Pork

3 thick boneless pork chops
3 small Fuji apples
Seasoning mix (we used CJ’s All-Terrain Seasoning)
1 cup chicken broth

Preheat the oven to 400 degrees F.

Butterfly the pork chops and season on both sides with a seasoning mix of your choice.

  Stab the apples all over with a fork.  Carefully wrap the pork around the apples, using toothpicks to secure the pork.

Place the wrapped apples in a baking dish.  Pour the chicken broth in the baking dish.

Bake, covered, for 30 minutes, basting with cooking once or twice during cooking.

Uncover and cook for another 5-10 minutes or until the pork begins to brown.

Let the pork rest for 5 minutes before serving.
