{Healthier} Chocolate Zucchini Muffins


Zucchini season is in full swing and with it, an updated version of chocolate zucchini muffins!

This time around, I added some oat flour and cut the sugar down… significantly!

The little dudes weren’t entirely thrilled about seeing bits of green in their muffins (but who can blame them? I remember thinking the same thing when I was little!), but I love one (or two) of these muffins alongside my coffee for breakfast!

Angel Wings Wednesday #15


My friends with babies don’t know what to do.  Do they avoid me?  Hang out anyway?

I know that when I had babies and knew of friends suffering with fertility problems, I never knew what to do.  Should I reach out or am I merely flaunting my ability to have children?  Should I not reach out and risk losing a friend?

Now that I’m on the other side, I know what to do.  And I’ve seen my friends not know how to act.  A lot of this recently came to a head, so I thought I’d share my experience.

Buffaloaf (Classic Meatloaf) {Food n' Flix}


Here we are for my second Cloudy with a Chance of Meatballs 2 recipes!  The sweet little Buffaloaf!  He’s so stinkin’ cute!

This month, my friend Wendy invited me to join in on Food ‘n Flix, a fun little club wherein participants watch a movie and then whip up something inspired by the movie!

This month’s movie is hosted by Camilla from Culinary Adventures with Camilla.  She chose Cloudy with a Chance of Meatballs or Cloudy with a Chance of Meatballs 2.

Since I’d seen the first one shortly after it came out, I decided to watch the second one.  And I LOVED it!!!  I think the sequel was even better than the original!

In Cloudy 2, the malfunctioning food making machine has continued to make food, but after being unattended, it has created a whole new ecosystem of foodimals!  I’m not going into much further detail about the movie here, but I will say that I love it and I adore the foodimals!


So after making the SubWhales, I knew I wanted to make the Buffaloaf.  I ended up liking him even better.  I just can’t get enough of him!  Dat face!

SubWhale {Food 'n Flix}

French Onion Soup Grilled Cheese & Balsamic Caramelized Onions: SRC


Yippee!  It’s Secret Recipe Club Day!!

This month’s assignment was Ellie’s blog, The Hobo Kitchen.  As the name suggests, Ellie resides in Hoboken, NJ.  As I started going through her recipes, some seemed familiar, and as I dug further, I found out that The Hobo Kitchen was formerly the Bitchn’ Kitchn’, a SRC blog assignment from last year!  Then I got really excited, because I knew about all the completely fabulous recipes on her blog!

Ellie even has a whole section of her recipe index dedicated to boozy cupcakes!  AHHH!!!  So tempting!

In the end, I decided to make a French Onion Soup Grilled Cheese sandwiches with Balsamic Caramelized Onions because yum.  Once I saw the recipe, I simply couldn’t get it out of my head!

Rhubarb Muffins




Of all of the plants in my garden, the rhubarb is doing the best, by far!

I’ve harvested it a number of times already and shared my bounty with friends and relatives.

My favorite dish to make is Strawberry Rhubarb Pie (or last year’s Rhubarb BBQ Sauce), but if I really want a treat, I make rhubarb muffins!

Can I tell you a secret?  These muffins are the exact kind of muffins I’m always calling out every other time I make a muffin.  You know, that ones that have so much sugar that they’re practically cupcakes?  Boom.

Like I said, they’re a treat!
