Citrus Roast Chicken


This is one of those toss together recipes.

I had a chicken that needed to be used and some citrus that had been hanging around the kitchen for quite awhile.

Sometimes toss together recipes are the best, because now this is my favorite go-to roast chicken recipe!


Citrus Roast Chicken
An Amy’s Cooking Adventures Original Recipe

1 (5 lb) whole chicken
1 lemon
1 orange
2 tbsp butter, melted
1 tsp salt
½ tsp black pepper
2 tsp dried rosemary, crushed
1 ½ tsp dried basil
1 small onion, quartered
4 cloves garlic, smashed


Preheat the oven to 400 degrees F.

Pat the chicken dry and loosen the skin of the chicken.

Zest the lemon and orange, place the zest in a bowl and slice the lemon and orange.

Stir together the zest, butter, salt, pepper, rosemary and basil.  Rub the zest mixture under the skin of the chicken and on the surface of the chicken.

Place the lemon and orange slices, onion, and garlic in the cavity of the chicken, placing any citrus slices that don’t fit around the chicken.

Bake in a covered roasting pan for 1 ½ - 2 hours or until cooked completely.
